Probably the full name of this was the "Don Cossack" named after the Russian people who lived on the river Don that flows from Central Russia to the Sea of Azov in Southern Russia. The work Cossack meaning "free people, migrants or bandits."

However, during George Hobart as licensee the full name seemed to appear during his reign between 1847 and 1858.

Saturday. (Before the Mayor and a full bench of magistrates.)

George Hobert, landlord of the "Cossack" in Delce-lane, John Leach, beer-seller, of the same place, and Thomas Simmons, of the "Man of Kent," John-street, Troy Town, severally appeared to summonses upon information's laid by Superintendent Tuff, for retailing beer to several persons in the morning of Sunday, the 20th Nov. instant, during the hours of divine service. The cases were fully proved, and the defendants were convicted in the following sums, including costs:— Hobart 3s., Leach 5s., and Simmons 3s.
